It is so versatile and I reach for it often when I want to jazz up the flavor profile.

Curry Spice Powder
3 TBS ground paprika
2 tsp ground cumin
2 tsp ground fennel seed
2 tsp dry yellow mustard
2 tsp ground red pepper
1 TBS coriander
1 TBS ground turmeric
1 tsp cardamom
1/2 tsp cinnamon
Place all spices in a small mason jar with a tight lid and shake until well blended. Makes about 3/4 cups of Curry Spice Powder. Store in cool dry place with a tight seal until ready to use.
