Quinoa Parfait Recipe
My first experience with a parfait was a Dairy Queen; the peanut buster parfait was its name. I was in love! Ice cream, chocolate syrup and peanuts all in a fancy plastic cup. I always felt like a grown up when I ate it! Although the Quinoa Parfait Recipe has no ice cream or peanuts…it reminds me of the flavors I loved in that childhood treat.

Creamy summer time dessert! Make your won with all the fresh topping you can imagine. Dairy free, gluten free and low sugar!
- 1 cup uncooked quinoa rinsed
- 2 cups unsweetened nut milk, almond, cashew or coconut
- pinch salt
- 1/4 cup honey
- 1 pasture raised egg
- 1 1/2 tsp vanilla extract
- 2 cups fresh berries
- 1/4 cup coconut milk whip
- ground cinnamon for garnish

Combine rinsed quinoa, 2 cups of milk and salt in medium saucepan. Bring to a simmer over medium heat. Reduce heat to low and simmer for 20 minutes. Stirring frequently.

In a bowl whisk honey, egg and vanilla extract. Set aside until quinoa mixture is cooked.

While quinoa mixture is hot, add 1/2 cup to honey mixture. Whisk together. Add back to saucepan and cook over medium heat 3-5 minutes until bubbly and thick.

Remove from heat and cool for at least 30 mins. I like to refrigerate it over night but not necessary.

Layer quinoa mixture and fresh berries. Top with a dollop of coconut milk whip and garnish with fresh herbs like mint or spices like cinnamon.
You can add the flavors you like to this recipe. The photo of sliced bananas and dark chocolate, fresh berries, or another favorite is pineapple and raspberries! Get creative and enjoy this very versatile recipe.
