Turkey Veggie Frittata

If you know anything about me, you know that I love eggs and they are my primary source of animal protein. I’m always on the hunt for new and delicious recipes incorporating eggs, and today, I’m presenting you with a yummy Turkey Veggie Fritatta! This frittata is a little bit different from my usual cooks though because I also am using organic ground turkey as well! On my quest to eat a healthy, cancer-protective diet, I always strive to increase my vegetables and eat minimal meats, so when I do eat meat I make sure it is top quality and organic. Speaking of the long heated debate on meat vs. no meat, I actually had a viewer ask me if meat caused cancer. You also probably know this about me but I have to say it again, I only buy my eggs from Vital Farms. I love Vital Farm eggs not only for the peace of mind knowing that the hens are treated well, but I really can taste a difference in the quality of the egg. Not only do they taste better, but pastured eggs, like the ones at Vital Farms, have higher nutritional content like more Vitamin A, E, and Omega-3’s. Since this is a Go2Kitchens recipe, you know I’ve got to get in as many vegetables as I can. That’s one of my secret weapons to living a healthy lifestyle, get as many veggies as I can into my food. So the asparagus in this cook is providing folate, iron, fiber, and protein (yes, plants have protein)! The spinach has vitamin K, A, B1, manganese, calcium (no, it’s not only found in milk!), zinc, and more. The kalamata olives are high in fat, but it’s the healthy fat that our bodies need, plus they are just so darn tasty! Make this recipe and tell me that healthy food can’t be delicious, I dare you!

A frittata is typically thought of as a breakfast or brunch meal, but I encourage you to think about making this even for dinner. It’s an easy recipe because it’s made in one skillet and all your friends and family will love the flavors.
Course: Breakfast, Dinner
Cuisine: Fritatta
Servings: 6
Ingredients
  • 1/2 pound organic turkey
  • 1/2 tsp garlic salt
  • 1 cup asparagus chopped
  • 3 asparagus tops for garnish
  • 2 cups baby spinach
  • 1/4 cup kalamata olives sliced
  • 1/4 cup feta cheese
  • 4 tbsp salsa
  • 6 Vital Farms Pasture Raised Eggs
Instructions
  1. Heat 1 tsp olive oil in a cast iron skillet.
  2. Brown turkey in skillet until cooked through, add salt and pepper to taste and garlic salt. Remove once cooked.
  3. Add a little more olive oil to the skillet and add asparagus, stir while cooking 2-4 minutes.
  4. Add spinach to the skillet and cook it until slightly wilted.
  5. Add turkey back into the spinach and asparagus, pressing it down into the bottom of the skillet like a crust.
  6. In a bowl, crack 6 eggs and add salt and pepper to taste.
  7. Add olives, salsa, and feta cheese into eggs and scramble together.
  8. Pour egg mixture over the turkey mixture in the skillet.
  9. Place the asparagus tops as a garnish on the frittata.
  10. Bake at 350 degrees for 30 minutes
  11. Cool slightly and slice into 6 pieces
