Chocolate Spice Popcorn Truffles
What happens when two great snacks come together as one? Chocolate Spice Popcorn Truffles! Confession, I love popcorn…no really…I LOVE POPCORN. Ok, now that is out of the way. I have another confession…I LOVE DARK CHOCOLATE. When they come together there is not a word on the planet that could describe my happiness.
This recipe is awesomely messy and it’s great fun to get the kids in the kitchen helping you make these little treats. You can divide the ingredients into smaller bowls and let them add cool and tasty things to their own mix. Try coconut, seeds, nuts, dates, or flavored baking chips. How fun to customize your truffle mix. Encourage them to name their recipe and put them out in a bowl for everyone to try.
TIPS:
- use an ice-cream scoop like one of these
- mash mixture into scoop firmly
- use organic non-GMO popcorn
- use coconut oil to pop your corn, yum
- store popcorn kernels in freezer to get the most fluffy popcorn ever
- store truffles in fridge to keep it from getting sticky
It can take a few to get the hang of making the truffles. If your mixture is too wet they may not form easily. Pop the mixture into the freezer for 1-2 mins to make them more sticky. If you watched my live broadcast you know these are good tips! 😉 Although I did get them to make truffle balls it was a bit of work to get the hang of it. Still fun and you could just eat it right out of the bowl without trying to form them into truffle balls! Get that imagination flowing and have fun!
Chocolate Spice Popcorn Truffles
8 cups plain popped popcorn
1/8 tsp cardamom
1/4 tsp nutmeg
1/4 heaping tsp of cinnamon
1/4 tsp of vanilla
2 cups paleo chocolate (or 2 – 8oz organic chocolate bars)
Line cookie sheet with wax or parchment paper. Place popcorn in a bowl. On low heat melt chocolate in sauce pan. Allow to cool slightly. While chocolate is cooling, add all spices and vanilla to popcorn, stir to mix well. Pour chocolate slowly over popcorn mixture, stir until mixed well. Use ice-cream scoop (see above) to form truffle. Compact popcorn tightly into scoop. Turn out truffle onto baking sheet. Allow to setup at room temperature or place in refrigerator for quicker results.
NOTE: When paleo chocolate recipe is used for chocolate, these sweet treats are dairy and gluten free.
