Cheesy Broccoli Quinoa No Bake Casserole
Recently while making Cheesy Broccoli Quinoa No Bake Casserole on my cooking show, Lunch with Leslie, someone commented: “this recipe feels like southern comfort food!” I could not agree more. But this is comfort food that won’t make you uncomfortable!
This recipe is actually a remake from a recipe that I used to make pre-cancer days that was one of my “healthy” dishes. The old recipe was white rice, 1/2 cup frozen broccoli, ham or bacon and Velveeta cheese! Well needless to say I found out my ideas of healthy were far from the truth I had imagined. So I revamped it and gave it more veggies, less processed foods and switched it to quinoa. I don’t miss the old version because this one has way more flavor and I know #cancerhatesit!

- 1 tbs olive oil
- 1 cup chicken sausage fully cooked, remove casing
- 2 cloves fresh garlic minced
- 4-5 green onions chopped
- 1 cup uncooked quinoa
- 2 cups chicken broth/stock
- 1 tsp dried thyme
- 2 cups broccoli florets chopped
- 2 cups brussels sprouts finely chopped
- 1 cup raw cheddar cheese shredded
- salt and pepper to taste

In a large stock pot heat olive oil. Add chicken sausage, onions, and garlic. Cook over medium heat until sausage is slightly brown. Transfer to casserole dish.

In the same pot add chicken stock, quinoa, thyme, broccoli, and brussels sprouts. Bring to a boil and then reduce heat to low. Cover and cook for 15 minutes.

When all chicken stock is absorbed, add mixture to the casserole dish with sausage mixture. Add cheddar cheese and mix well until cheese is melted.
