Diary Free Espresso Hot Chocolate
Happy February! With Valentine’s Day just around the corner, I wanted to create a decadent and sweet treat that you could create for your loved one but still have it be healthy. This is my early Valentine’s Day gift to you! Diary Free Espresso Hot Chocolate with a surprise ingredient, avocado! What the what?!? The avocado is replacing any dairy items like milk or butter that you might use for that creamy consistency, BUT it provides healthy fats, so it’s a win-win! Also, since it’s dairy free, we are omitting the milk base and using another surprising ingredient, coconut water!
Coconut water is one of the best sources of hydration on the planet aside from regular water, and it has lots of nutrients in it like magnesium, manganese, potassium, and more. Coconut water also contains electrolytes, and some athletes use it as a replacement for those sugary sports drinks! But not all coconut water is created equally, my friends! That’s why I’m using C2O coconut water for this recipe. C2O sources their coconuts from freshwater areas, so the flavor is not as salty as some coconut waters sourced near the coast. Also, let’s not forget the cocoa powder we are using in this recipe is ALSO full of antioxidants! Cocoa is very healthy for your heart and is a superfood if used without a lot of added sugar. Ok, one more tip before we get into this recipe; when you cut open your avocado and are adding it to the drink, make sure you scrape ALL the avocado flesh out of the skin. The dark green flesh that sits right next to the skin of the avocado is where a lot of the healthy fats live, so we want to get all that goodness inside our cup! Ok, let’s get cracking on this delicious hot chocolate!

What about a marriage of your two favorite flavors? Espresso and chocolate come together, along with avocado to make this decadent creamy drink. Healthy and happy, just like we like it!
- 1 cup Espresso flavored C2O coconut water
- 1 ripe avocado
- 1 tbsp organic maple syrup
- 2 tbsp organic cocoa powder
- 1/4 tbsp cinnamon
- 1/4 tsp turmeric
- pinch cayenne pepper
- pinch sea salt

Pour coconut water into a large pot and turn heat on low/medium.

Cut avocado in half and place avocado flesh into the pot.

Add maple syrup and cocoa powder.

Add spices and salt.

Use an immersion blender to blend until smooth or put into a blender to blend.

Add more C02 espresso coconut water if needed to get it smooth and to the consistency you prefer.

Pour into your favorite mug for you and your loved one and enjoy!
