Easy Apple Pie Taquitos
Easy Apple Pie Taquitos are filled with apple goodness! We’ve all heard the phrase “an apple a day keeps the doctor away” right? Have you ever stopped to think about why that phrase came about? It’s because apples are such an amazing, healthy fruit! Studies have shown that eating apples often can help prevent inflammation in the body, fight heart disease, fight diabetes, and can improve your digestive health! Apples also are high in vitamin C, fiber, and can help you maintain a healthy weight. A member of the rose family, apples are sweet and crunchy, and this particular apple recipe is super quick to make! I personally make my own apple pie filling for this, but you can also buy premade, I’d just look for the highest quality apple filling at your supermarket.
You are also going to need tortillas for this recipe, and I like to use Siete grain free tortillas since they are gluten free and made with great ingredients! For this recipe, I’m using the cassava and coconut flour variety but they also carry cassava and chia, and almond flour tortillas. You want to make sure your tortillas are at room temperature when you are making this so they will roll easier. You will also need an 8 inch brownie pan and a shallow dish for coating your taquitos.
These taquitos are great for serving at a party or gathering since they travel so well or they are fun to make with your kids. Children love filling the tortillas and helping to roll them! You could even set up a prep station and have friends help by having someone fill the tortilla, someone roll, and someone coat with the sugar and cinnamon coating! It’s always more fun when people help in the kitchen and food is made together! Now let’s get to the recipe!
These yummy taquitos are super quick to whip up, especially if you use premade apple pie filling, just make sure you get organic and try to find something without a lot of extra sugar. Since they are so quick, this is a great snack or treat to make when you have unexpected guests show up at your door! Try making them with other pie fillings or fruit and see what your favorites are!
- 1 tbsp organic cane sugar
- 1/2 tbsp cinnamon
- 3 fuji apples cut into small pieces
- 6-8 gluten free tortillas
- 2 cups apple pie filling

Place sugar and cinnamon in the bottom of your shallow dish and mix until evenly distributed.

Butter your 8 inch brownie pan and preheat oven to 350 degrees.

Take a tortilla and place apple filling in a vertical line down the center of it then roll into a tight taquito.

Roll the taquito into the sugar and cinnamon mixture, coating evenly, then place into the brownie pan.

Fill and roll all the tortillas and top with any left over sugar and cinnamon mixture.

Bake for 10-12 minutes at 350 until brown and crisp on the edges. Allow to cool and enjoy!
How I make my apple pie filling...
3 medium organic fuji apples, peeled, cored and chopped small pieces
2 tbs of maple syrup
1 tsp cinnamon
pinch of salt
juice from 1/2 lemon1 tbs arrowroot starch
1 tbs arrowroot starch
Add all ingredients to a saucepan except arrowroot. Heat on medium heat, and constantly stir until apples are slightly soft. Slowly add arrowroot starch and stir until thickened. Remove from heat and set aside until you are ready to roll the taquitos.
