Easy Compound Butter
When you are making a diet change and looking to incorporate more vegetables into your life, sometimes it can seem like you are giving up flavor too. This could not be further from the truth! I’m going to teach you how to make compound butter or butter that is flavored with different herbs, spices, and fruits to give lots of flavors to your vegetable-based dishes! Butter was demonized for years! The media wanted you to this it is unhealthy for you. Now we are learning the benefits of real grass-fed butter and its effect on our long-term health. Real, grass-fed butter contains CLA (conjugated linoleic acid) which is a great fat for our bodies. It is a medium chain fatty acid along with a long chain fatty acid. This provides energy to our bodies and also satisfies our taste buds, and some studies have shown that CLA can be protective against obesity and other diseases like cancer! So don’t fear butter, but DO make sure you are using a top quality grass-fed butter, like the one from Vital Farms. In addition to amazing eggs, Vital Farms also produces grass-fed, good for you butter that comes from happy cows. Just like their chickens, these cows are allowed to roam free and graze on a variety of lush greens, producing the best butter around!
KITCHEN HACK…
I also have a little tip for you before we get going with this recipe. Did you know that it’s OK to leave your butter out on the counter? I’ve found that a lot of people believe butter has to be stored in the refrigerator and that isn’t the case! You can leave your butter on the counter (out of the direct sun, it will melt!) and this way it will be nice and soft when you’re ready to use it! I use a Kitchen Aid mixer to create my compound butter but if you don’t have one, don’t worry. You can use a hand mixer or an immersion blender on low speed. When you are mixing the butter at the beginning of this process, you simply want to aerate the butter to make it more light and smooth. I used two sticks of butter and separated it out into four servings so I could do four different flavored kinds of butter.
Flavor and decadence is all can think of when I think about these smooth flavored butters. Using fresh ingredients and making combinations that make your mouth water.
- 4 tbsp grass-fed butter softened
- 1 tsp of fresh basil minced
- 1 tsp sun-dried tomatoes minced
- 1 tsp fresh parsley minced
- 4 tbsp grass-fed butter softened
- Juice of 1/2 a lime
- 1 tsp cilantro chopped
- 1/2 tsp chili pepper flakes optional
- 4 tbsp grass-fed butter softened
- 1 pinch of cardamom
- 1-2 sprigs of rosemary finely minced
- 1-2 strawberries diced small
- Splash of vanilla
- 1/2 tsp honey
- 4 tbsp grass-fed butter
- 1/4 tsp cinnamon
- 1/2 tsp honey

Blend the butter using your Kitchen Aid mixer or hand mixer until smooth.

Mix all ingredients with a fork in a bowl until well blended.

Place in a small container or roll out in parchment paper into a “log” shape.

Use to top pasta, toast, bread, fish, meats, or vegetables.

Play around with different spices and flavors. Some other flavors that I love are garlic, sage and black pepper or shallot and parsley.
