Easy Peasy Pad Thai Recipe – Raw Food

Serve it chilled or warm it in your oven on the lowest setting for 10 minutes. Now just because this is a raw food it doesn’t mean you can’t throw some fresh shrimp, grilled tuna or salmon on there for some new flavors. Grab your chop sticks, its time for dinner!
Easy Peasy Thai Pad Recipe
3 zucchini, spiralized or make thin slices with a vegetable peeler
2 mushrooms, rough chopped
3 green onions, sliced
1 red bell pepper, cut into thin strips
10 snow peas, cut into thin strips
1 cup sun flower or mung bean sprouts
½ juice lime
½ tsp sea salt
1 tbs extra virgin olive oil
For Toppings
1 cup almonds, sliced or rough chopped
¼ cup cilantro, rough chopped
more sprouts for garnish
Place all ingredients in a bowl except toppings and let sit for ½ hour while you make the sauce. To serve add sauce and mix gently, garnish with toppings and serve.
Pad Thai Sauce Recipe
1 tbs seaweed, rehydrate in water for ½ hour before using
½ cup almond butter
1/3 cup sun dried tomatoes slices
2 garlic cloves, minced
5 dates, pitted
¼ cup olive oil
2 thai chili pepper, seeded for less heat and whole for more heat
2 tbs grated fresh ginger
2 tbs coconut aminos
2 tsp sea salt
2 cup cilantro, rough chopped
juice of 1 lime
1 tbs raw honey or maple syrup
Add all ingredients into a bottom blade high-speed blender or food processor and blend until smooth. Serve over Pad Thai.
