My friend Nanette really knows her way around in the kitchen! Its fun to watch. Her website is www.nanetteachziger.com. She has written a book called Kaizen and it is amazing! These scones are great for any time, but I have to say I love them for brunch or breakfast. They are grain free and are great for those are look for a grain free toast option!
Ingredients:
2 cups almond flour
1/3 cup arrowroot powder
1/2 teaspoon of sea salt
1 teaspoon of baking powder
3 tablespoons of raw honey
1 free range chicken egg
1/4 cup organic yogurt
1/4 cup coconut oil (solid is best)
1 teaspoon vanilla extract
zest from 1 orange
1/3 cup mixture of dried cranberries and dark organic chocolate chips
Mix all dry ingredients. Add honey, egg, vanilla, yogurt and solid coconut oil. Mix well. Fold in dried cranberries and chocolate chips. Shape dough into large round piece. Cut into 8 wedges. Separate and put on baking sheet. Bake at 325 for 20- 30 mins. Edges should be golden brown.
