Oh yes you can make Homemade Peppermint Patties!
I have to tell you the first time I saw this recipe on the Dr. Josh Axe website I was a little nervous about eating coconut oil. As soon as I tried one all that fear went away. They are so good you will will never look at a silver wrapped candy package again. Although they are not guilt free, you are getting a healthy dose of great fats and antioxidants from the chocolate. Dr. Axe says this about coconut oil, “Coconut is one of the healthiest foods you can eat! Coconut is a medium chain fatty acid which is easily digested and converted to energy instead of being stored as fat. Because of this, coconut aids in weight loss, helps to stimulate the metabolism and has amazing anti-microbial properties.” What? Ok, sign me up I’ll eat them…but you would never have to twist my arm!
Peppermint Patties
2 cups coconut oil, room temp
1/2 cup honey
2 tsp peppermint extract
1 tsp real vanilla extract
1 serving of paleo chocolate (click for recipe)
Make ahead 1 serving of paleo chocolate (click for recipe), do not let it harden but let it cool until it is near room temperature, but still liquid for dipping. Line 2 baking sheets with wax paper. In a bowl, mix the coconut oil, honey, vanilla and peppermint extract. Mix well until blended smooth. Use spoon to portion out the mixture and place a spoon full on baking sheet lined with wax paper. Use back of spoon to make desired shape. Place in freezer to harden. Dip the hardened patties in the chocolate until covered and place back on the baking sheet. Place in the freezer until the chocolate has hardened.
Variation for dipping chocolate. Buy 3 organic dark chocolate bars (8oz, 70% cacoa) melt the chocolate bars and 1/2 cup coconut oil over medium low heat in a saucepan. Remove from heat to cool for 5-10 minutes.
